These Peanut Butter Banana Bars are soft and chewy and make the perfect breakfast. They come together so quickly with only 7 simple ingredients that you probably already have in your pantry and fridge. My family loves these bars for breakfast but they also make a great snack. I love meal prepping them in the beginning of the week for easy breakfasts and snacks during a busy week. The Peanut Butter bars are dense and have a great chewy texture.

How to Make Peanut Butter Banana Bars

Peanut Butter Banana Bars are so easy to make. To start, blend your oats in a food processor until they are ground into oat flour. You can also use quick oats instead of old-fashioned oats. Blend all of your ingredients in the blender until they’re smooth. Pour the batter into a baking dish and bake for 20 minutes. At 20 minutes, check how done the bars are by inserting a toothpick into the bars. When the toothpick comes out clean, the bars are ready. Store the bars in the fridge for up to 5 days.

Along with a healthy diet, regularly eating peanuts and peanut butter can help prevent some types of childhood cancers. A 2024 study shows that the polyphenol-rich skins on peanuts may inhibit the growth of childhood leukemia cells. The polyphenols reduced the increase of these cells for up to 72 hours after eating them. The skins in peanuts have bioactive compounds including antioxidants that help to neutralize free radicals that damage cells. So when possible, look for peanuts with the skins on.

Just eating peanuts regularly is associated with a lower cancer risk. Having 2 servings of peanuts or peanut butter a week reduced the risk of benign breast disease in young adults by 39%. Grab some peanuts or peanut butter and enjoy!

Prep Time:  10 minutes Cook time: 20 minutes Total time: 30 mins

INGREDIENTS

  • 2 cups old-fashioned oats (or quick oats)
  • 2 ripe bananas
  • 1/2 cup peanut butter + peanut butter to drizzle on top
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon baking powder
  • 1/4 cup chopped peanuts

INSTRUCTIONS

  1. Preheat oven to 350 degrees and spray a 7 x 11 glass baking dish with nonstick spray.
  2. Blend oats in a food processor until ground. Add the rest of the ingredients to the food processor and blend until smooth. 
  3. Pour batter into the baking dish. Bake for 20-25 minutes until a toothpick stuck into the center of the loaf comes out clean. Let cool before slicing.
  4. Top with drizzled peanut butter and chopped peanuts.
