Homemade Chicken Broth
This White Cheddar Chicken Soup recipe uses rotisserie chicken to save time. My friend recently taught me that you can save the bones and what is left from the chicken and cook it in the slow cooker on low for 8-12 hours with chopped onion and garlic covered in water and it makes the absolute most delicious chicken broth. So that is what I used for this recipe but of course, you can use store bought broth as well. If you have an extra day, I highly recommend making your own broth to add a bunch of flavor to your soup.
How to Make White Cheddar Chicken Soup
I took some shortcuts with this White Cheddar Chicken Soup by using a rotisserie chicken. Wow, what a great timesaver! I made homemade broth which sounds hard but is so, so easy and I made it the night before I wanted to make this soup. First, you’re going to sauté your onions, carrots, and potatoes. Add in the garlic, chicken, corn, spinach, broth and milk. Whisk in the Hoosier Hill Farm white cheddar powder and cook for 5-10 minutes to let the broth thicken and until the potatoes are soft. You can store this soup in the fridge for up to a week and I think it may freeze well though I have not tried it.

INSTRUCTIONS

Sauté the onions, carrots and potatoes in a large pot with the olive oil over medium heat for about 8 minutes until the onions are translucent and the potatoes are partway softened. Add in the garlic and salute for 1 minute longer.

Add in the chicken, corn, spinach, chicken broth and milk. Whisk in the white cheddar powder and black pepper.

Simmer for 5-10 minutes until the broth thickens and the potatoes are cooked through.
