Yes, you can absolutely double this recipe. We actually double it but for our website we wrote it up as the original amount. This will make about 40-50 pieces of candy depending on the size you make them balls. We make them a little smaller because this candy is very sweet.

Martha Washington Candy
This Old Fashioned Martha Washington Candy is one you will want to include in your Christmas candy list! It’s absolutely delicious.
- 1 stick butter softened
- 1 1/2 teaspoons vanilla extract
- 1/2 of a 14 ounce can of sweetened condensed milk
- 2 cups powdered sugar
- 7 ounce package of sweetened shredded coconut
- 1/2 of a 10 ounce jar maraschino cherries drained and finely chopped
- 1 cup finely chopped pecans
- 3 cups chocolate chips
- 2 tablespoons shortening

Beat together butter, vanilla extract and milk until smooth and creamy with a mixer. Add powdered sugar and continue beating until combined. Fold in coconut, cherries and pecans with a spoon. Refrigerate for at least an hour.

Line a pan with parchment paper. I used a 10 x 15 baking sheet. Use a tablespoon of mixture and your hands to form balls from chilled mixture. Place the baking sheet back in the refrigerator while melting chocolate chips and shortening in the microwave until smooth. About a minute or two.

Use a fork to dip and roll the balls in the melted chocolate. Place the dipped balls back on the baking sheet as you dip them. Can place back in refrigerator to harden after dipping. Makes about 40 to 50 candies depending on size you make them.
