Perfectly seasoned cubes of golden potato with lovely chunks of peppers and onion make a great addition to a fry-up for breakfast or as a side dish with dinner. These breakfast potatoes are made in the air fryer, so we can go a little easier on the oil. They cook in about 20 minutes.
These Air Fryer Breakfast Potatoes are a scrumptious dish perfectly suited to the breakfast table!
We don’t need to par-boil the potatoes first, so we’re ONLY using the air fryer – no other pans.
These seem to be a side dish on every breakfast menu in the US, but I have yet to see them over here in the UK, so I thought I’d make my own version! In the air fryer too, so you know it’s quick and easy with minimal mess afterwards!
📋 Ingredients
Potatoes – Use floury potatoes (rather than waxy potatoes), such as maris piper or russet, as they will keep nice and soft in the middle, whilst crisping up a little on the outside.
Seasonings – I used a blend of salt, pepper, paprika, and garlic powder but you can adjust to your taste.

- Start off by tossing the potato chunks with the oil and seasoning in a bowl. Then, air fry for 10 minutes.
- Toss the veg in the seasoning leftover from the potatoes.
- Add in the rest of the veg and give it all a little shake in the basket to make sure it’s all combined, then air fry for a further 10 minutes.
- Now, you’re ready to serve!
Pro Tip
Give the air fryer basket a little shake midway through cooking to help everything cook evenly.

My favourite way to serve this is alongside a fried egg, so you can dip those salty potato chunks in that golden, runny yolk.

I wouldn’t recommend making this ahead or freezing it, as these are best served fresh out of the air fryer so the potatoes stay fluffy with a slight crisp.
You can halve this recipe to serve a few or double it to serve a crowd. However, if you’re increasing the recipe I recommend increasing the cooking time (as the air fryer basket will be a little more crowded) to make sure everything cooks evenly.

Place the potatoes, oil, salt, pepper, garlic powder and paprika in a bowl and toss together.
450 g (1 lb) floury potatoes, 2 tbsp oil, ½ tsp salt, ½ tsp black pepper, ½ tsp garlic powder, ½ tsp paprika

Transfer the potatoes to the air fryer basket (reserving any remaining seasoned oil in the bowl) and cook the potatoes on the air fry setting at 200C/400F for 10 minutes.

Add the peppers and onion to the bowl you tossed the potatoes in. There should still be a few dregs of seasoned oil in the bottom. Toss the peppers and onion in he bowl so any remaining oil and seasoning coats them.
1 red bell pepper, 1 green bell pepper, 1 onion

After potatoes have been in the air fryer for 10 minutes give the basket a shake. Add the peppers and onions in and shake again.

Cook the potatoes, peppers and onions in the air fryer for further 10 minutes, shaking the basket halfway through cooking.

Check the potatoes are done by sliding a knife into one of the potatoes. It should glide in easily. Cook for a few minutes longer if needed, then serve.
